Chocolate pear tartlets

For the shortcrust pastry, put flour, 125 g sugar, salt, 1 packet of vanilla sugar, egg yolk, 1 tablespoon of cold water and flaky butter in a mixing bowl, first using the dough hook on the hand mixer, then Knead with your hands to form a smooth dough.
