Béchamel sauce with cheese

  • 1 onion
  • 30 g Butter or margarine
  • 30 g Flour
  • 250 ml vegetable broth
  • 250 ml Milk
  • 100 g cheese (e.g. B Gouda or Cheddar cheese)
  • Salt
  • pepper
  • grated nutmeg

## Peel the onion ## and dice it finely. Melt the fat in a saucepan. Steam the onion cubes until translucent. Add flour and sweat. Deglaze with the stock and milk and simmer for approx. 5 minutes while stirring.

Meanwhile, grate ## cheese ##. Add the cheese to the sauce and melt for 2-3 minutes while stirring. Season to taste with salt, pepper and nutmeg.
