Béchamel sauce with cheese
- 1 span> onion
- 30 span> g Butter or margarine

30 g Flour - 250 ml span> vegetable broth
- 250 span> ml Milk
- 100 g cheese (e.g. B Gouda or Cheddar cheese)
- Salt

- ## Peel the onion ## and dice it finely. Melt the fat in a saucepan. Steam the onion cubes until translucent. Add flour and sweat. Deglaze with the stock and milk and simmer for approx. 5 minutes while stirring.

- Meanwhile, grate ## cheese ##. Add the cheese to the sauce and melt for 2-3 minutes while stirring. Season to taste with salt, pepper and nutmeg.
