Apple curd pancakes

- 100 g low-fat quark
- 3 spa n> eggs (size M)
- 50 g flour
- 3-4 EL Milk span>
- 1 TL Sugar
- 1 pinch salt
- 1 (approx. 200 g) large apples

- Quark, eggs, flour, Mix the milk, sugar and salt until smooth. Let the dough soak for about 10 minutes. Peel the apple, remove the core. Peel and quarter the apple and remove the core. Cut the quarters into thin wedges. Roast the oat flakes in a pan (approx. 18 cm Ø) without fat. Remove. Heat the oil in portions in the pan. Pour half of the batter into the pan and spread half of the apple wedges on top. Bake pancakes over medium heat for 3-4 minutes on each side. Keep the finished pancakes warm. Bake the remaining dough in the same way. Wash lemon balm and cut into strips. Serve the pancakes with a dollop of yogurt each. Sprinkle with oatmeal and lemon balm. Add the rest of the yoghurt
