Sweet mirabelle bruschetta

For 4 people
  • 8 slices (25 g each) ciabatta bread
  • 150 ml Milk
  • 3-4 tbsp + 100 g sugar
  • 500 g Mirabelles
  • 2 EL Butter
  • Juice of 1 orange
  • 1 EL Pistachio kernels
  • peeled zest from 1 untreated orange
  • 3 eggs ( Size M)
  • 3-4 EL Oil
  • Mint

Put bread on a plate. Warm milk lukewarm and mix with 2 tablespoons of sugar. Sprinkle the bread evenly with it. Let it steep for 15-20 minutes until all of the liquid is absorbed, turning once.

Wash, clean and stone mirabelle plums. Quarter the fruit. Put 100 g sugar in a pan and caramelize until golden. Add the butter and orange juice, melt the butter in it. Turn the mirabelle plums in the hot caramel.

Let it steep for a moment, remove from the heat and let cool down. Roughly chop the pistachios, mix with the orange peel into the mirabelle plums. Whisk eggs in a deep plate, turn the bread in it. Heat the oil in portions in a coated pan.

Bread in portions on each side for 2-3 minutes until golden brownroast meat. Sprinkle bread with 1-2 tablespoons of sugar. Arrange the bread with the mirabelle plums and decorate with mint.
