Duck breast on lettuce

For 4 people
  • 2 Duck breasts (approx. 350 g each)
  • 1 EL Oil
  • 100 g Lamb's lettuce
  • 150 g Picked salad
  • 10 0 g Radicchio salad
  • 250 g romaine lettuce
  • juice of 1 large orange
  • 4 EL dark balsamic vinegar Vinegar
  • salt
  • pepper
  • Sugar

Wash the duck breasts and pat dry. Heat oil in a pan. Fry the duck breasts on the skin side for about 10 minutes over medium heat, turn and fry for another 10 minutes. Clean, wash, pat dry the salads and, with the exception of the lamb's lettuce, pluck into pieces. Remove the duck breast and keep warm. Pour off fat if necessary. Deglaze the roast with orange juice and vinegar. Season to taste with salt, pepper and sugar. Cut the duck breasts into slices. Arrange the salads and duck breast on plates, pour some marinade over them. Add the rest of the marinade. Baguette tastes good with it
