Creamy curd milk with grapefruit and tangerines

For 4 people
  • 2 Grapefruits
  • 3 mandarins
  • 1 EL Rye flakes
  • 500 g thick milk (thickened sour milk)
  • 2 packet Vanillin sugar
  • 125 g whipped cream
  • 1 TL honey
  • lemon balm

Peel the grapefruit so that the white skin is completely removed and cut out the fillets between the separating skins en. Peel the mandarins and cut into slices. Heat a dry pan and roast the rye flakes for about 1 minute while turning. Mix the sour milk and vanilla sugar together. Whip the cream until stiff and fold into the thick milk. Arrange the grapefruit, mandarin slices and the curd on plates, let the honey run over the curd and sprinkle with the rye flakes. Serve decorated with lemon balm if you like
