Bruschetta with tomato-mozzarella salad and rocket

  • 1/2 onion
  • 1 large beefsteak tomato
  • 60 g light mozzarella
  • 2 TL Olive oil
  • 3 TL Vinegar
  • coarse sea salt
  • pepper
  • 40 g rocket
  • 2 slices (40 g each) Farmer's bread
  • Basil

Peel the onion and cut into fine strips. Quarter the tomato, clean, core and cut into cubes. Cut the mozzarella into cubes. Put the cheese, diced tomatoes and onion in a bowl. Add 1 teaspoon of oil and vinegar and season with salt and pepper. Wash rocket and pat dry. Halve the bread slices, toast them in a grill pan without fat until crispy. Brush with the remaining olive oil and sprinkle with salt. Arrange rocket and mozzarella tomato salad on the bread and garnish with basil
