Bruschetta with tomato-mozzarella salad and rocket

- 60 g light mozzarella

- Peel the onion and cut into fine strips. Quarter the tomato, clean, core and cut into cubes. Cut the mozzarella into cubes. Put the cheese, diced tomatoes and onion in a bowl. Add 1 teaspoon of oil and vinegar and season with salt and pepper. Wash rocket and pat dry. Halve the bread slices, toast them in a grill pan without fat until crispy. Brush with the remaining olive oil and sprinkle with salt. Arrange rocket and mozzarella tomato salad on the bread and garnish with basil
