Berries with mascarpone foam

For 4 people
  • 500-600 g mixed berries
  • (e.g. B. raspberries, currants, strawberries and blackberries)
  • 8 Ladyfingers
  • 4 EL Raspberry spirit, orange
  • Liqueur or orange juice
  • 1 fresh egg (Gr. M)
  • grated peel of
  • 1/2 untreated lemon
  • 2 TL lemon juice
  • 150-200 g Mascarpone
  • (Italian cream cheese)
  • or crème double
  • 2 EL sugar
  • 1 packet vanillin sugar
  • 1 EL Icing sugar
  • Mint

Sort or clean the berries and let them drain. Crumble the biscuits. Divide into 4 fireproof molds. Drizzle with raspberry spirit

Separate egg. Mix the egg yolk, lemon zest and juice, mascarpone, sugar and vanilla sugar together. Beat the egg white until stiff and fold in

Spread the berries on the ladyfingers. Pour the cream on top and bake golden brown over the top heat in the oven or under the preheated grill. Dust with icing sugar and decorate with mint if necessary
