Tomato salad with avocado cubes

For 4 people
  • 750 g green and red tomatoes
  • 100 g Rauke
  • 2 red onions
  • 2 ripe avocados
  • 2 EL Lemon juice
  • 3 EL Sunflower seeds
  • 4 EL Balsamic bianco vinegar
  • 1 TL Sugar
  • 4 EL Olive oil
  • Salt
  • pepper

Wash and clean tomatoes and cut into large pieces. Clean rocket, wash and drain well. Peel and halve the onions and cut into thin slices. Halve the avocados, remove the stones. Peel and dice the avocado halves. Drizzle the pulp with lemon juice

Roast the sunflower seeds in a pan without fat, remove. Mix the vinegar and sugar together. Fold in a thin stream of oil. Season to taste with salt and pepper. Mix the tomatoes, onions, rocket and avocados with the vinaigrette. Arrange salad on plates and sprinkle with sunflower seeds
