Spinach balls

  • 1 kg Spinach leaves (or 450 g of frozen spinach leaves)
  • 1 onion
  • 1-2 Garlic cloves
  • 1 Stiel Mint
  • 2 EL Olive oil
  • salt
  • Pepper
  • 100 g Parmesan cheese
  • some pickled peppers

Sort the spinach, wash and drain. Peel onion and garlic and chop finely. Wash the mint and chop it too. Heat olive oil. Sauté the garlic and onion in it.

Add the spinach and let it collapse completely. Season with salt, pepper and mint. Let it drain again if necessary. Shape into small balls (ideally with the help of an ice cream scoop).

Grate the parmesan and turn the balls in it. Serve with pickled peppers.
