Rocket salad with cheese

For 4 people
  • 30 g Sunflower seeds
  • 200 g Cherry tomatoes
  • 3-4 tablespoons white wine vinegar
  • salt
  • pepper
  • 3-4 EL Olive oil
  • 125 g rocket (approx. 2 bundles)
  • 50 g Radish sprouts
  • 40 g thinly grated old Gouda cheese

Roast sunflower seeds in a pan without fat and let cool down. Wash the cherry tomatoes, pat dry and quarter. Mix together vinegar, salt and pepper, beat in the oil. Mix the vinaigrette, sunflower seeds and tomatoes. Clean rocket, wash and drain well. Wash and drain the sprouts as well. Cut the rocket, except for a few young leaves for garnish, into strips and mix with the sprouts. Arrange the salad on plates and spread the tomato vinaigrette on top. Sprinkle with shaved Gouda and serve garnished with rocket.
