Potato soup with boiled ham

For 4 people
  • 500 g potatoes
  • 3/4 l Vegetable stock (instant)
  • 1/2 bunch parsley
  • 150 g cooked ham
  • 200 g whipped cream
  • salt
  • Pepper
  • ground nutmeg

Peel, wash and dice the potatoes. Cook the potatoes in the stock for about 20 minutes. In the meantime, wash the parsley, pat dry and finely chop. Cut ham into strips.

Remove 2 tablespoons of potato cubes from the broth, set aside and mash the remaining potatoes very finely with a potato masher. Add the cream, bring to the boil and season with salt, pepper and nutmeg.

Add the remaining potato cubes and strips of ham to the soup and serve sprinkled with parsley.
