Fruit cake with tempura flour

For 5 people
  • 70 g ground almonds
  • 60 g Sugar
  • 1 pinch salt
  • 3 eggs
  • 60 g vegetable oil
  • 150 g Tempura flour
  • 250 g preserved fruit
  • butter or oil
  • Icing sugar

Mix the ground almonds, sugar and a pinch of salt well. Whisk eggs, slowly add in small amounts and mix well with a whisk. Add vegetable oil and mix. Add sifted tempura flour and mix gently.

Spread a tart pan (24cm) with a little butter or oil. Pour the dough into the mold and garnish the cooked fruit on top. Bake in the oven at 170-180 degrees for 30-40 minutes. Cool and sprinkle with powdered sugar.
