Fruit cake with tempura flour
- 70 g ground almonds li>
- 60 g Sugar
- 1 pinch salt
- 3 eggs
- 60 g vegetable oil
- 150 g Tempura flour
- 250 g preserved fruit span>

- Mix the ground almonds, sugar and a pinch of salt well. Whisk eggs, slowly add in small amounts and mix well with a whisk. Add vegetable oil and mix. Add sifted tempura flour and mix gently.

- Spread a tart pan (24cm) with a little butter or oil. Pour the dough into the mold and garnish the cooked fruit on top. Bake in the oven at 170-180 degrees for 30-40 minutes. Cool and sprinkle with powdered sugar.
