Winter dream cantuccini
- 500 g flour
- 1 packet spa n> Baking powder
- 200 g Sugar
- 2 Parcel Vanilla sugar

- Mix the flour, baking powder, sugar, vanilla sugar, espresso powder and a pinch of salt in a mixing bowl. Add the bitter almond flavor, flaky butter, eggs and 6 tbsp water. Knead everything first with the dough hook of the hand mixer and then briefly with your hands to form a smooth dough.

- Briefly knead the cashew nuts into the dough.

- Cut the dough into thirds. Shape each third into a roll (approx. 28 cm long) and cover and chill for approx. 2 hours.

- Line a baking sheet with parchment paper. Place the dough rolls on the baking sheet a little apart and press them a little flatter. Bake in a preheated oven (electric stove: 200 ° C / convection: 175 ° C / gas: level 3) for about 20 minutes.
