White garlic soup (ajo blanco)

For 9 people
  • 5 slices toasted bread
  • 6 cloves of garlic
  • 1 (approx. 500 g) grape blue grapes
  • 200 g peeled almonds
  • 6 EL olive oil
  • Salt
  • Pepper
  • 4 EL Wine vinegar

Soak toasted bread in water. In the meantime, peel the garlic. Wash, halve and core the grapes. Express the toast well. Put toast, almonds, garlic and oil in a blender and process into a smooth paste. Season with salt, pepper and vinegar. Gradually add 1 1/2 liters of cold water. Mix thoroughly again. Then chill. Serve with the grapes
