Watermelon Salad with Goat Cheese

  • 0.75–1 kg watermelon
  • 1 Bund Radishes
  • 4 stem (s) mint
  • 2 organic limes
  • Salt and pepper
  • Sugar
  • 4 –5 EL Olive oil
  • 150 g goat cream cheese (roll)

Cut the melon into wedges and core. Remove the pulp from the skin, then cut into strips. Clean and wash the radishes and cut into thin slices. Wash the mint leaves and set aside a few leaves for garnish.

Cut the remaining leaves into fine strips.

Wash the limes with hot, dry them. Finely rub the peel of 1 lime, then squeeze the fruit. Mix together the lime juice, zest, salt, pepper and 1/2 teaspoon sugar. Beat the oil on it. Mix the vinaigrette with the prepared salad ingredients.

Approx. Chill for 15 minutes.

Cut the remaining lime into wedges. Arrange melon salad, crumble cheese over it. Garnish with the remaining mint and lime wedges.
6.
Drink tip: Go with cool rhubarb spritzer.
