Vanilla parfait with berry stone

  • 2 egg yolk
  • 1 egg
  • 50 g Sugar
  • pulp of 1 vanilla pod
  • 200 g whipped cream
  • 1 pack (300 g) frozen berry cocktail
  • 1/4 l red wine
  • 1 heaped teaspoon of cornstarch

Put the egg yolk, egg, 40 g sugar and vanilla pulp in a bowl. Beat with a whisk in a hot water bath until a thick cream is formed. Stir in a cold water bath.

Whip the cream until stiff and fold into the egg yolk mixture. Place the loaf pan (1 liter capacity) at an angle and half fill one corner with the parfait mixture. Let freeze for 30 minutes. Place 100 g of frozen berries on the frozen parfait and spread the remaining parfait over the top.

Approx. Let freeze for 4 hours. For the sauce, heat the red wine up to 3 tablespoons. Mix the cornstarch with the rest of the red wine until smooth, add to the boiling red wine. Add the berries. Simmer for about 2 minutes while stirring.

Add sugar to taste and let cool. Dip the knife in hot water and remove the parfait from the mold, cut into slices and serve on plates with the sauce.
