Strawberry and nectarine cold bowl with rice pudding

For 4 people
  • 1 l low-fat milk (1.5% fat)
  • 1 cinnamon stick
  • scraped pulp of 1 vanilla pod
  • Salt
  • 175 g whole grain short grain rice
  • 400 g Strawberries
  • 2 Nectarines
  • 3/4 l cherry fruit juice drink
  • 4 slices untreated lemon
  • Diet binding fix
  • liquid sweetener
  • 1-2 EL lemon juice
  • 2 protein
  • possibly some cinnamon
  • Lemon balm
  • for garnishing

Bring the milk with the cinnamon stick, vanilla pulp and a pinch of salt to the boil. Add rice and let it soak for about 1 1/4 hours over low heat. Stirring occasionally. In the meantime, clean and wash the strawberries, quarter or halve depending on the size.

Put 4 pieces aside for garnish. Wash the nectarines, cut in half, remove the core and cut into wedges. Heat the juice with lemon wedges. Scatter Diet-Bindefix, bring to the boil. Remove from the hotplate.

Fold in the fruit, let it steep briefly. Season with sweetener and a little lemon juice. Let cool down. Beat egg whites until stiff. Fold under the rice pudding. Also season with sweetener and possibly some cinnamon.

Place the hot rice in the cold bowl. Serve garnished with halved strawberries and lemon balm.
