Strawberry and nectarine cold bowl with rice pudding
- 1 l low-fat milk (1.5% fat)
- 1 cinnamon stick

- Bring the milk with the cinnamon stick, vanilla pulp and a pinch of salt to the boil. Add rice and let it soak for about 1 1/4 hours over low heat. Stirring occasionally. In the meantime, clean and wash the strawberries, quarter or halve depending on the size.

- Put 4 pieces aside for garnish. Wash the nectarines, cut in half, remove the core and cut into wedges. Heat the juice with lemon wedges. Scatter Diet-Bindefix, bring to the boil. Remove from the hotplate.

- Fold in the fruit, let it steep briefly. Season with sweetener and a little lemon juice. Let cool down. Beat egg whites until stiff. Fold under the rice pudding. Also season with sweetener and possibly some cinnamon.

- Place the hot rice in the cold bowl. Serve garnished with halved strawberries and lemon balm.
