Spicy spinach cheesecake

  • 375 g whole wheat flour

Put the flour in a bowl and make a well in the middle. Crumble in the yeast, mix with 150 ml lukewarm water. Scatter some flour from the edge and cover and let rest in a warm place until cracks appear.

Knead the pre-dough, another 150 ml water, oil and 1/2 teaspoon each of salt and sugar to form a smooth dough. Cover the dough and let it rise in a warm place for about 30 minutes. Peel and finely chop the onions and garlic.

Clean the spinach and wash thoroughly. Onion andSauté the garlic cubes in hot fat. Add the dripping wet spinach and let it collapse. Season to taste with salt, pepper and nutmeg and drain.

Knead the yeast dough well again, roll out on a greased baking sheet. Spread the slightly cooled spinach mixture on top. Scatter cheese on top and let the cake rise for another 15 minutes. Then bake in the preheated oven (electric stove: 200 ° C / gas: level 3) for 25-30 minutes.

Cut the spinach cake into pieces and serve. A fresh tomato salad with onion and dill vinaigrette tastes good with it. Makes about 12 pieces.
