Sour cream waffles with red jelly

For 8 waffles + grits
  • 500 g mixed berries (e.g. Strawberries, raspberries, currants)
  • 1 EL cornstarch
  • 1/4 l Cherry nectar
  • 2 EL + 225 g sugar
  • 250 g soft butter
  • 1 packet Vanilla sugar
  • Salt
  • 3 Eggs (size M)
  • 300 g flour
  • 1 TL baking powder
  • 250 g Sour cream
  • Oil

Sort berries, wash and drain if necessary. Quarter the strawberries. Mix the starch with 5 tbsp nectar until smooth. Bring the rest of the nectar to the boil with 2 tablespoons of sugar. Add the mixed starch, bring to the boil while stirring. Approx. Simmer for 2 minutes. Fold in the berries and let cool.

For the dough, stir creamy butter, 225 g sugar, vanilla sugar and a pinch of salt. Stir in eggs one at a time. Mix flour and baking powder, stir in alternately with sour cream.

Heat a waffle iron with oilbrush out. Put approx. 2 tablespoons of dough in the middle and spread lightly. Bake about 8 waffles one after the other. Serve with red grits and possibly sour cream.
