Shrimp cocktail in melon

For 4 people
  • 2 small sugar melons
  • (approx. 500 g each; z. B. Galia or Charentais melons)
  • 200 g Shrimps (deep sea crab meat)
  • 1 small onion
  • 2-3 Stie l (e) fresh or slightly dried dill
  • 2-3 EL Vinegar
  • 1-2 EL honey
  • Salt
  • pepper
  • 2 EL Oil
  • 1 TL pickled green peppercorns
  • (a. d. Glass)
  • lettuce

Cut the melons in half and the core e remove. Cut out balls from the pulp with a ball cutter. Remove the rest of the pulp with a spoon and cut into small pieces (or remove everything with a spoon and dice)

Rinse the shrimps, allow them to drain. Peel and finely dice the onion. Wash the dill and save upsomething, cut finely. Mix the vinegar, honey, salt and pepper together. Beat the oil on it. Fold in onion, dill, shrimp, peppercorns and melon pulp

Wash the lettuce, shake dry and pluck a little smaller. Line the melon halves with it. Pour in the shrimp cocktail and garnish with the rest of the dill
