Rollmops with fried potatoes

For 2 people
  • 2 sour apples
  • 1 EL Mayonnaise
  • 150 g Skimmed milk yogurt
  • 2 spring onions
  • 1 TL pickled green
  • Peppercorns
  • Salt
  • 1 pinch sugar
  • 1 knife tip Mustard
  • 500 g waxy potatoes
  • (e.g. B. Hansa or Cilena)
  • 2 EL Oil
  • 1 TL Caraway
  • 2 pickles
  • 3 Bismarck herring

For the sauce, wash the apples, quarter them and remove the core. Set aside two apple quarters. Cut the rest into thin slices. Mix the mayonnaise and yogurt together. Fold in apple slices.
Clean and wash the spring onions and cut into rings. Fold the onion rings and peppercorns into the sauce. Season to taste with salt, sugar and a little mustard. Peel and wash the potatoes, cut into wedges and pat dry with kitchen paper.
Heat the oil in a pan. Fry the potatoes in it, turning, for about 15 minutes over medium heat. Season with caraway seeds and salt. In the meantime, cut the cucumber and apple quarters into long thin sticks. Drain the Bismarck herrings and cut in half lengthways.
Cover with apple and cucumber strips and roll up. Serve the fish with fried potatoes and a little sauce. Suffice the rest of the sauce.
