Pumpkin pie with pears and bacon

Put flour and 1 pinch each of sugar and salt in a mixing bowl, make a well in the middle. Warm milk lukewarm, crumble yeast and dissolve in it while stirring. Pour the yeast milk into the well, sprinkle some flour over the edge.

Pour olive oil on the edge. Cover and let rise in a warm place for about 20 minutes. In the meantime, peel, core and roughly dice the pumpkin. Cut the bacon into fine cubes, leave crispy in a pan without fat.

Drain on kitchen paper. Sauté the pumpkin in the frying fat and deglaze with the broth. Cover and cook over medium heat for about 15 minutes. In the meantime, work the yeast dough vigorously with the dough hook of the hand mixer and let rise for another 20 minutes.

Pour the pumpkin onto a sieve and let it drain well. Peel, quarter and core the pears and cut into wedges. Melt butter in a pan, dust with 10 g sugar and deglaze with lemon juice.

Bring to the boil and sauté the pear wedges briefly for about 3 minutes. Take out and let drain well. Mash 2/3 of the pumpkin. Whisk eggs, milk, cinnamon, 2 tablespoons of sugar and 1 pinch of salt.

Knead the yeast dough again and roll out on a floured work surface (approx. 30 cm Ø). Line an ovenproof form or a flan form (26 cm Ø) with baking paper. Sprinkle half of the bacon on the bottom.

Put in the dough, press firmly. Place the cooled pear wedges and the mashed pumpkin on top. Pour egg milk over it. Scatter the rest of the bacon and pumpkin cubes on top. Bake in a preheated oven (electric stove: 175 ° C / convection: 150 ° C / gas: level 2) for about 1 hour.
