Potato salad with radishes

  • 1 kg new potatoes
  • Salt
  • 100 g Baby spinach
  • 1/2 Bund (approx. 50 g) Radishes
  • 1 onion
  • 2 EL medium hot mustard
  • 4 tbsp light balsamic vinegar
  • 3 EL olive oil
  • pepper
  • 1 EL Sugar
  • freshly ground pepper
  • 1 EL freshly grated horseradish

Wash the potatoes thoroughly, cut in half or quarter and put them in boiling salt water for approx. Cook for 20 minutes. Sort, wash and clean the spinach. Wash and clean the radishes and cut into thin slices.

Peel the onion, cut in half and finely dice.

Mix the onion, mustard, vinegar and 3 tablespoons of potato cooking water. Beat in the oil, season with salt, pepper and sugar. Drain the potatoes. Combine the spinach, radishes, potatoes and dressing, serve, sprinkle with pepper and horseradish.
