Plum cake from the tray with cinnamon meringue

  • 1,25 kg plums

Clean and wash plums, cut lengthways and stone. Mix the fat, 200 g sugar and vanilla sugar until creamy. Separate 2 eggs. Mix in 4 eggs and 2 egg yolks one after the other. Mix the flour and baking powder and stir in alternately with the milk.

Spread the dough evenly on a well-greased baking sheet (approx. 32 x 39 cm). Spread the plums on top. Bake in a preheated oven (electric stove: 200 ° C / convection: 175 ° C / gas: level 3) for about 20 minutes.

Mix 150 g sugar and cinnamon. 4thBeat the egg white and lemon juice very stiffly, pouring in the sugar and cinnamon mixture. Pour the meringue mass into a piping bag with a star nozzle and spray curls onto the cake.
