Pickled herrings
- 4 kitchen-ready green herrings (approx. 150 g)
- 60 g flour
- Salt
- 5 tablespoons (50 g) clarified butter
- 350 ml white wine vinegar
- 2 EL Cucumber spice (preserving spice)
- 50 g sugar span>
- 150 g Onions
- 150 g red onions
- 1/2 Bundle Dill

- Wash the herrings thoroughly under running cold water and pat dry. Mix the flour and a little salt on a plate. Roll herring in it. Fry the herrings in the hot clarified butter for 5-6 minutes per side.

- For the brew, bring the vinegar and 150 ml of water to the boil. Add the cucumber spice, 2 teaspoons of salt and sugar and simmer for about 15 minutes. Peel the onions and cut into thin rings. Add to the hot brew and let it steep for about 10 minutes.

- Place fried herring in a large flat dish, pour the marinade over it and let it steep for at least 24 hours. Wash, pat dry and chop the dill. Sprinkle over the herrings just before serving.

- Garnish with dill flowers if you like.
