Pancakes with apple compote

For 4 people
  • 1 kg sour apples
  • 100 g + 3 tbsp sugar
  • 4 EL lemon juice
  • 200 ml clear apple juice
  • 2 Eggs (size M)
  • 200 ml milk
  • 100 g Flour
  • 1/2 TL baking powder
  • 1 pinch Salt
  • 1 packet Vanillin sugar
  • 20 g clarified butter
  • Mint

Peel the apples, quarter them , core and cut into cubes. Bring the apples, lemon juice, apple juice and 75 g sugar to the boil and simmer covered for 8-10 minutes. Let cool down. In the meantime, whisk eggs and milk in a bowl. Mix the flour and baking powder, add 3 tablespoons of sugar, salt and vanillin sugar and stir to form a smooth dough. Let the dough rest for 5-10 minutes. Heat the clarified butter in portions in a coated pan (28 cm Ø). Bake 4 pancakes one after the other. Arrange the pancakes and apple compote on plates, decorate with mint
