Oriental lamb skewers

For 4 people
  • 250 g long grain rice
  • Salt
  • 50 g Raisins
  • 24 (240 g) shallots
  • 1/2 (à 125 g) green and red peppers
  • 1 (80 g) Onion
  • 1 red chilli pepper
  • 2 Garlic cloves
  • 2 EL Olive oil
  • 1 EL Tomato paste
  • 1 pack (500 g) Passed tomatoes
  • 1 stem thyme
  • Pepper
  • Sugar
  • 4 Lamb salmon ( à approx. 140 g)
  • 6 Stem (s) Parsley
  • 2 Cardamom pods
  • 50 g Cashew nuts
  • 2 Sprigs of rosemary
  • Shish kebab skewers

Prepare rice in boiling salted water according to the instructions on the packet. In the meantime, rinse the raisins and drain them. Peel the shallots. Clean and wash the peppers and cut into squares (approx. 2 x 2 cm).

Peel the onion and cut into cubes. Wash the chilli pepper and cut into slices. Peel the garlic. Finely chop 1 toe. Heat 1 tablespoon of oil in a saucepan. Add onion cubes and tomato paste and roast gently for about 3 minutes.

Deglaze with tomatoes. Add the chopped garlic, chilli and thyme, reduce everything to a creamy sauce and remove from the heat. Season the sauce with salt, pepper and sugar. Put rice in a colander and drain.

Wash and clean the meat and cut across into 3 cm thick pieces. Place the meat, shallots and peppers alternately on kebab skewers. Wash the parsley, pat dry, pluck the leaves from the stems and cut into strips.

Roughly chop the cardamom and cashew nuts, put 1 tablespoon of seeds aside. Add the parsley, raisins, cardamom and cashew nuts to the rice, mix and keep warm. Season the skewers with salt and pepper. Roughly pluck the rosemary.

Cut 1 clove of garlic into slices. Heat 1 tablespoon of oil in a pan. Fry the skewers in portions for about 8 minutes while turning. Fry the cashew nuts, garlic and rosemary with the last skewers.

Remove the thyme from the sauce. Arrange the skewers and tomato sauce on preheated plates, garnish with cashew nuts, garlic and rosemary. Add the rice and the remaining tomato sauce.
