Orecchiette with cream peas

For 4 people
  • 500 g pasta (e.g. orecchiette)
  • salt, pepper
  • 100 g Parmesan (piece)
  • 1 onion
  • 1 E L Olive oil
  • 200 g whipped cream
  • 300 g frozen peas
  • 1 EL TK- Parsley

Noodles in 4–5 l boiling salted water (approx Cook 1 teaspoon salt per liter according to the instructions on the packet.

In the meantime, grate the parmesan into fine chips. Peel onion and chop finely. Heat oil in a pot. Steam the onion until translucent.

Drain the pasta and collect approx. 1⁄8 l of the pasta water. Put the pasta back in the pot.

Pour the cream and pasta water over the onion. Add the frozen peas and parsley, bring to the boil and simmer for about 5 minutes. Season with salt and pepper. Mix the pea sauce and parmesan well with the pasta.
5.
Season again with salt and pepper.
