Orecchiette with broccoli and mushrooms

For 4 people
  • Salt, pepper, ground allspice
  • 500 g Broccoli
  • 4 Anchovy fillets (glass)
  • 200 g mushrooms
  • 2 Garlic cloves
  • 4 stalk (s) flat leaf parsley
  • 400 g Noodles (e.g. . B. Orecchiette)
  • 5 EL Olive oil

3–4 l salt water (approx Salt per liter). In the meantime, clean the broccoli, cut into very small florets and wash. Rinse the anchovies, pat dry, cut very finely. Clean the mushrooms, wash them if necessary and cut or quarter them.

Peel and finely chop the garlic. Wash parsley, shake dry, finely chop.

Put the pasta in the boiling water and cook according to the instructions on the packet. Add the broccoli about 3 minutes before the end of the cooking time. In the meantime, heat 2 tablespoons of oil in a pan. Fry the mushrooms in it over medium heat for about 5 minutes.

Finally fry the anchovies and garlic briefly. Season with salt and pepper.

Drain the pasta and broccoli, put back in the saucepan. Add parsley, 3 tablespoons of oil and mushrooms and mix everything well. Season to taste with salt, pepper and a little allspice. Freshly grated Parmesan cheese also tastes good.
