Mini chocolate cream puffs

For 25 cream puffs
  • 250 g dark chocolate
  • 50 g milk chocolate
  • 400 g whipped cream
  • 50 ml milk
  • 35 g Butter or margarine
  • 1/2 packet Vanillin sugar
  • 1 pinch Salt
  • 75 g flour
  • 6 g Cocoa powder
  • 2 Eggs (size M)
  • 10 g coconut fat
  • 25 g white couverture

Roughly chop 200 g of dark chocolate and milk chocolate. Heat 350 g cream in a saucepan and remove from heat. Dissolve the chocolate in it while stirring until a smooth, even chocolate mass is formed. Put the mixture in a mixing bowl, let it cool and chill for approx. 2 hours.

Bring the milk, fat, vanilla sugar and salt to the boil in a small saucepan. Mix the flour and cocoa, add all at once to the pan and stir with a mixing spoon until the mixture forms a lump and a skin forms on the bottom of the pan. Put the dough in a mixing bowl, stir in the eggs one after the other with the dough hook of the hand mixer. Let the dough rest for about 20 minutes

Place the wire shelf on the bottom of the oven and place a flat, oven-safe dish with hot water on top. Put the choux pastry in a piping bag with a large perforated nozzle (14 mm Ø). Approx. Sprinkle 25 walnut-sized tuffs onto a baking sheet lined with baking paper. Bake in a preheated oven (electric stove: 200 ° C / convection: 175 ° C / gas: level 3) for about 20 minutes. Beat the chocolate cream with the whisk of the hand mixer until creamy. Pour into a piping bag with a large star nozzle and fill the cut cream puffs with the chocolate cream. Approx. Chill for 20 minutes

Roughly chop 50 g of dark chocolate and melt together with 50 g of cream and coconut fat while stirring in a small saucepan over low heat. Allow to cool slightly. Roughly chop the white couverture, melt it over a warm water bath and place in a disposable piping bag. Cut off a small corner. Put a small dollop of dark chocolate icing on each cream puff and decorate with a little white couverture. Chill briefly again
