Marshmallow muffins

  • 1 packet vanilla sugar

  • 100 g Butter
  • 2 eggs (size M)
  • 300 ml Buttermilk
  • 300 g flour
  • 2 heaped teaspoons of baking powder
  • 1/2 TL Natron
  • 100 g Mini-Marshmallows
  • 50 g Dark chocolate
  • Icing sugar

Mix the sugar, vanilla sugar, salt and butter with the whisk of the hand mixer until foamy. Add eggs and buttermilk and stir in. Mix the flour, baking powder and baking soda, add to the buttermilk mixture and stir in briefly.

Place paper cases in the indentations of the muffin tray. Pour half of the batter and spread 60 g of marshmallows on top. Pour in the rest of the batter. Bake in a preheated oven (electric stove: 200 ° C / convection: 175 ° C / gas: level 3) for 20-25 minutes.

Chop the chocolate. Halve 40 g marshmallows, mix with the chocolate and pour onto the muffins 5 minutes before the end of the baking time. Let muffins rest in the baking tray for 5-10 minutes. Then take them out of the molds and let them cool on a wire rack.

Dust with powdered sugar.
