Manchego balls with paprika salsa

For 6 people
  • 1 red and yellow peppers
  • 2 Spring onions
  • 2 EL lemon juice

Quarter peppers, clean, wash , pat dry and finely dice. Wash the spring onions, pat dry and cut into fine rings. Season the lemon juice with salt, pepper and sugar. Beat in the oil drop by drop.

Mix the peppers, spring onions and vinaigrette. Cut bread into pieces and grind in the universal chopper. Mix the flour and breadcrumbs. Whisk the egg and 2 tbsp cream,season with a little salt and pepper.

Dice the Manchego cheese, turn first in the egg, then in the flour mixture and press on. Heat the frying oil. Fry the cheese in portions until golden brown, remove and drain on kitchen paper.

Arrange the paprika salsa and cheese on small plates.
