Wash the raisins, drain well and soak in rum, cover and set aside. For the buttercream, stir in pudding powder, 75 g sugar and 100 ml milk until smooth. Bring 400 ml milk to the boil, remove from the stove. Stir in the mixed pudding powder, bring to the boil again while stirring and simmer for approx. 1 minute. Put the pudding in a bowl, cover directly with foil and let cool at room temperature. Also store butter at room temperature. Beat eggs with salt and 75 g sugar for 6-8 minutes with the whisk of the hand mixer until thick and creamy. Stir in 5 tablespoons of milk. Mix flour and baking powder, sieve on top and fold in. Line a baking sheet with parchment paper. Put the mixture on top and smooth it out. Bake in the preheated oven (electric stove: 200 ° C / convection: 175 ° C / gas: level 3) for about 10 minutes. Sprinkle a clean tea towel with sugar. Overturn the sponge cake, carefully peel off the baking paper. Immediately roll up the plate with the tea towel and let it cool down. Whip butter stored at room temperature with the whisk of the hand mixer until creamy white (approx. 15 minutes). Gradually stir in the pudding, tablespoon at a time. Unroll the sponge cake. Put the cream on the biscuit, except for about 3 tablespoons, to decorate. Scatter rum raisins on top, except for a few to decorate. Place the wafer rolls in a row on top. Roll everything up again and refrigerate for about 2 hours. Bring the jam to the boil in a saucepan, strain through a sieve. Spread the jam on the roll and let it dry. Briefly stir the reserved cream. Put in a piping bag with a small perforated nozzle. Sprinkle the roll with the cream. Decorate with the raisins, wafer rolls and mint that were set aside.
