Leberkäse with potato salad and fried egg

For 4 people
  • 1,2 kg waxy potatoes
  • 2 onions
  • 7 EL Oil
  • 6 EL white wine vinegar
  • 300 ml Beef broth
  • 2 EL medium hot mustard
  • salt
  • Pepper
  • 1 Bundle Chives
  • 4 slices Leberkäse
  • 4 eggs

Wash the potatoes and cook covered in boiling water for about 20 minutes. Drain, rinse in cold water and let cool down a little. Then peel off the shell. Cut the potatoes into thin slices while they are still warm.

Peel the onions and cut into fine cubes. Heat 2 tablespoons of oil in a pan. Steam the onions until translucent. Stir in vinegar, stock and mustard, bring to the boil briefly. Season with salt and pepper. Carefully mix the hot vinaigrette with the potatoes.

Wash the chives, shake dry and cut into rolls. Fold under the potatoes with 3 tablespoons of oil. Min. Let it steep for 30 minutes.

Halve meat loaf. Heat 2 tablespoons of oil in a pan. Fry the Leberkäse in portions for 2-3 minutes on each side. Remove from the pan and keep warm in the oven (approx. 50 ° C) untilall slices are fried.

Fry the eggs in the frying fat with the fried eggs. Season with salt and pepper. Season the potato salad with salt and pepper if necessary. Serve with meat loaf and potato salad.
