Herbal salad with raspberries

For 4 people
  • 1 Bund watercress + basil
  • 1/2 Bund Lemon balm
  • 1 Bund Rocket
  • 250 g raspberries
  • 5 EL raspberry vinegar
  • 1 EL honey
  • Salt
  • black pepper
  • 8 EL Rapeseed oil
  • 4 (à 200 g) Beef steaks
  • Possibly edible flowers to garnish

Wash the herbs and rocket, pat dry. Pluck the leaves from the herbs, clean the rocket. Sort the raspberries. Whisk vinegar, honey, salt and pepper together. Stir in 6 tablespoons of oil in a thin stream. Season the vinaigrette again to taste

Season the meat with salt. Heat 2 tablespoons of oil in a grill pan. Fry the meat for 3–4 minutes on each side. Mix the herbs with the vinaigrette, carefully fold in the raspberries. Season the steaks with pepper and serve with the salad. Garnish with edible flowers if necessary. Baguette bread tastes good with it
