'Happy Veggie' spinach pies

For 12 pieces

  • 2 eggs + 1 egg yolk (Gr. M)
  • 1 EL light balsamic vinegar
  • 1 EL Curry powder

  • 500 g Baby spinach leaf
  • 2 Onions
  • 1 Garlic clove
  • 1 EL Oil
  • 2 EL Sugar
  • 1 EL Balsamic vinegar
  • 125 g Parmesan
  • 250 g Ricotta
  • 1 Egg

For all veggie friends: Knead the Pietiges. For the filling, wash baby spinach leaves and pat dry. Peel and halve the onions and cut into fine strips. Peel and finely chop the clove of garlic.
Heat 1 tablespoon of oil in a large saucepan. Onions and garlic in it with sugarSauté for about 2 minutes while stirring. Deglaze with the balsamic vinegar. Add the spinach and let it collapse (only takes 2–3 minutes).
Remove the pot from the heat.
Finely grate the parmesan. Mix the ricotta, egg and parmesan in a large bowl. Add the spinach and onion mix and mix everything well. Season to taste with salt and pepper.
Knead the dough again until smooth with your hands. Then roll out 3-4 mm thin with a cake roll on a floured work surface. Cut a total of 12 circles (approx. 12 cm in diameter) out of the dough.
Mum's trick: draw a template on a piece of baking paper with a compass, cut it out, place it on the dough and cut along the template with a kitchen knife. Press the dough circles into the hollows of the muffin tray so that the dough protrudes slightly. Knead the leftover dough again, roll out and cut out another 12 smaller circles (approx. 10 cm Ø).
Fill the hollows with meat, spread 1–2 teaspoons of BBQ sauce on top. Brush the protruding edges of the dough with the egg milk. Place the smaller dough circles on top as a lid, press lightly. Brush the lid with the rest of the egg milk.
Bake the pies in a hot oven for about 15 minutes. Remove. Carefully remove the pies from the edge with a small kitchen knife. Possibly. use balsamic cream to paint small smileys on the lid. Finished! Enjoy the meal!.
