Fried Dublin Bay Prawns

  • 500 g Arctic prawns in brine
  • 1 untreated lemon
  • 1 Perennial celery
  • 1 onion
  • 2 EL Butter
  • Salt
  • pepper
  • 6 Stalk (s) Parsley
  • 4-6 slices Baguette bread

Drain the prawns. Wash lemon with hot water and rub dry, cut 6 slices, use the remaining lemon for other purposes. Wash, clean and slice celery. Peel the onion and cut into fine cubes. Heat butter, add onion, celery, prawns and lemon wedges. Sweat for about 5 minutes while turning. Take out the lemon after 2 minutes. Season the prawns with salt and pepper. Wash the parsley, shake dry, pluck the leaves from the stems and cut into strips. Arrange the bread and prawn pan on plates. Garnish with lemon and parsley
