Frankfurt wreath

  • 1 Parcel 'Vanilla flavor' pudding powder (for 500 ml milk ; for cooking)

For the buttercream, stir pudding powder, 75 g sugar and 100 ml milk until smooth. Bring 400 ml milk to the boil, remove from the stove. Stir in the mixed pudding powder, bring to the boil again while stirring and simmer for about 1 minute. Put the pudding in a bowl, cover directly with foil and let cool at room temperature.

Store 250 g butter at room temperature. For the dough, stir 150 g butter, salt, 200 g sugar and vanilla sugar with the whisk of the hand mixer until foamy. Stir in eggs one at a time. Mix the flour, starch and baking powder, stir alternately with 5 tablespoons of milk into the fat and egg cream.

Grease a Frankfurt wreath shape or ring shape (1.4 liter content; 22 cm Ø) well and dust it with flour. Pour in the dough and smooth it out. Bake in a preheated oven (electric stove: 175 ° C / convection: 150 ° C / gas: level 2) for 30-40 minutes. Let cool slightly on a wire rack. Turn out of the mold and let cool down completely.

Beat the butter stored at room temperature with the whisk of the hand mixer until creamy white (approx. 15 minutes). Gradually stir in the pudding, tablespoon at a time. Stir the jelly until smooth. Cut the cooled cake twice horizontally. Spread currant jelly on the bottom floor. Spread 1/4 of the cream on the jelly and smooth it out. Place the second floor on top and coat with another quarter. Place the third base on top as a lid.

Pour some cream into a piping bag with a star nozzle. Spread the rest of the cream all around. Sprinkle the wreath with brittle. Spray the rest of the cream onto the wreath as tuffs. Halve the cherries, put on the tuffs. Approx. Chill for 2 hours
