Cucumber and avocado smoothie with cranberries

For 4 people
  • 1 small cucumber
  • 1 maturity Avocado
  • 250 g liquid, low-fat yogurt
  • 1 organic lime
  • 1 small green chilli pepper
  • 4 stalk coriander
  • salt, pepper
  • 1 mini cucumber
  • some whole, dried cranberries
  • wooden sticks

Peel the cucumber, cut in half lengthways, remove the seeds and cut into pieces. Halve the avocado, remove the stone and spoon the flesh out of the skin. Put the cucumber, avocado and yogurt in a blender.

Rinse off the lime and rub the peel. Squeeze out the juice. Clean, rinse and finely chop the chilli. Rinse the coriander, shake dry. Put a few leaves aside for garnish, finely chop the rest.

Put the lime zest, juice, chilli and chopped coriander in the mixer and puree everything finely. Season with salt and pepper. Cool well.

For the sticks, rinse the cucumber and cut it lengthways into very thin slices. Put them on wooden sticks together with the cranberries. Mix the smoothie again and pour into glasses. Garnish with a cucumber and cranberry stick and coriander leaves.
