Colorful fruit base (diabetics)

For 12 pieces

  • 75 g flour
  • 1 TL Baking powder
  • 1/4 (approx. 150 g) peeled and cleaned pineapple
  • 2 peeled kiwi fruit (approx. 80 g each)
  • 200 g cleaned strawberries
  • 1 glass 370 ml can of apricots
  • 1 Package Vanilla-flavored pudding powder
  • 350 ml Milk
  • 1 packet clear cake topping
  • Fat and a little flour

Separate eggs. Beat the egg whites and 2 tablespoons of cold water until stiff. Sprinkle in salt and 80 g of diabetic sweetness. Stir in egg yolks one at a time. Mix the flour and baking powder, sieve in portions onto the egg mixture and fold in. A fruit soil shapeGrease (approx. 27 cm Ø) and dust with a little flour. Pour in the dough and smooth out. Bake in a preheated oven (electric stove: 175 ° C / convection: not suitable / gas: level 2) for about 20 minutes. Cut pineapple into pieces, kiwi fruit into slices. Boil 50 g of diabetic sweetener and 100 ml of water. Cook the kiwis and pineapple in it for about 1 minute. Take out, drain and let cool down. Wash and quarter the strawberries. Drain the apricots while collecting the juice. Cut the apricots into wedges. Take the bottom out of the oven, place on a grid and let cool down for about 5 minutes. Then fall out of the mold. Let cool down. In the meantime, stir in the pudding powder, 50 g diabetic sweetener and approx. 6 tablespoons of cold milk until smooth. Bring the rest of the milk to the boil, remove the saucepan from the stove and stir in the mixed pudding powder. Put back on the stove and cook for at least 1 minute while stirring. Let cool down briefly, put on the floor and smooth out. Spread the fruit on the cake. Put the icing powder in a small saucepan. Fill up apricot juice with water to 1/4 liter. Bring to the boil while stirring. Using a spoon, distribute the hot filling evenly over the fruit from the center. Let cool down
