Colorful farmer's breakfast

For 4 people
  • 1 kg large potatoes
  • 100 g Breakfast bacon
  • 2 EL Oil
  • 1 red and yellow pepper
  • 1 Bundle Spring onions
  • Salt
  • Pepper
  • 6 eggs
  • 6 EL Milk
  • 1 glass (180 ml ) Cornichons
  • Parsley

Peel and wash the potatoes and cut into cubes. Finely dice the bacon and fry until crispy in a pan. Take the bacon cubes out of the pan and set aside. Heat the oil in the bacon, fry the potatoes in it over a medium heat for 12-15 minutes until golden brown. Clean and wash the peppers and spring onions. Cut the bell pepper into strips and the spring onions into rings. Add the vegetables to the pan 5 minutes before the end of the cooking time and fry them. Put the bacon cubes in the pan and season the ingredients with salt and pepper. Whisk eggs and milk, pour into the pan and let set over low heat. Loosen the farmer's breakfast on the edge of the pan and fold over halfway. Serve the farmer's breakfast garnished with gherkins and parsley
