Colorful baguette bites

For 4 people
  • 1 small onion
  • 100 g sausage or cooked ham
  • 1 Pickled cucumber (a. d. Glass)
  • 1-2 EL Vinegar (e.g. white wine vinegar)
  • Salt, coarse pepper
  • Sugar
  • 1-2 TL Oil
  • 3-4 Stalk (s) Parsley
  • 100 g cream yoghurt
  • 2 EL Crème fraîche or cream cheese
  • 8 (approx. 80 g) small slices of baguette
  • Salad leaves and cherry tomatoes

Peel and finely dice the onion. Finely dice the sausage or ham and cucumber. Mix the vinegar, salt, pepper and sugar together. Beat in the oil. Mix the onion, sausage and cucumber with the marinade. Let it steep briefly. Wash the parsley and finely chop except for a little.

Mix the cream yoghurt and crème fraîche. Season with salt and pepper. Put some yoghurt cream on each baguette slice. Arrange the sausage salad on top. Garnish with parsley, lettuce leaves and tomatoes if you like

You can prepare the topping very well - it tastes best if it is well drawn. However, only distribute on the baguette shortly before serving. If you like, you can toast it briefly beforehand
