Coleslaw with mango

For 4 people
  • 1/2 head of white cabbage (approx. 400 g)
  • 1 small cucumber
  • 1/2 Bundle Spring onions
  • 1 (approx. 350 g) Mango
  • 1 TL Palm sugar (or brown sugar)
  • 2 EL soy sauce
  • 2 EL Lime juice
  • 2 red chillies

Clean and wash vegetables. Cut the cabbage into strips, the cucumber into quarters lengthways, then into slices, and cut the spring onions into rings. Peel the mango. Cut the pulp into wedges from the stone and dice.
Dissolve the sugar in a tablespoon of hot water. Stir in the soy sauce and lime juice. Score the chillies lengthways, remove the seeds, cut into fine rings and stir into the marinade. Mix the vegetables and fruits, pour the marinade on top and let it steep for an hour.
