Cold strawberry bowl with almond snow dumplings

For 4 people
  • 500 g strawberries
  • 1/2 l Apple juice
  • 2 tbsp + 50 g sugar
  • 1 packet red groats
  • 1 Protein (size M)
  • 1 pinch salt
  • 20 g Almond flakes

Wash, clean and quarter the strawberries. Bring the apple juice and 2 tablespoons of sugar to the boil. Puree half of the strawberries and add to the apple juice. Mix the red groats powder with 6 tablespoons of water until smooth and pour into the apple juice while stirring. Bring to the boil and simmer for 1 minute. Chill the strawberry cold bowl. Beat the egg white until stiff, pour in 50 g of sugar and salt. Beat until the mixture is glossy and the sugar has dissolved. Heat water in a large saucepan, do not boil. Prick dumplings from the meringue with 2 teaspoons and let them slide into the boiling water. Put the lid on and let it stand for about 5 minutes. Roast the almonds in a pan without fat, remove them and let them cool. Stir the rest of the strawberries into the cold bowl. Turn the snow dumplings in the almonds. Arrange the cold bowl in plates. Put snow dumplings on top
