Cold red wine bowl with berries

For 4 people
  • 1 Vanilla pod
  • Peel of 1 organic orange
  • 350 ml red wine
  • 100 ml light grape juice
  • 75 g Sugar
  • 1 cinnamon stick
  • 1 Clove
  • 1 star anise
  • 75 ml Cognac
  • 125 g Blackberries
  • 125 g blueberries
  • 125 g red currants
  • 125 g raspberries
  • Mint

Cut the vanilla pod lengthways andscrape out the pith with the back of the knife. Slowly bring the orange peel, vanilla pulp and pod, wine, juice, sugar, cinnamon, clove and anise to the boil in a saucepan. Pour in the cognac, flambé and remove from the stove. Let the brew stand for approx. 10 minutes

Sort the blackberries, blueberries and currants, wash and drain well. Pluck currants from the panicles. Sort the raspberries. Mix the berries lightly in a bowl. Pour the wine over the berries through a sieve. Let cool down and chill for at least 3 hours. Cold bowl in bowls, decorated with mint, serve
