Cold potato and cucumber soup

For 4 people
  • 350 g potatoes
  • 1/2 Cucumber
  • 1 Onion
  • 1 EL Oil
  • 1 Glass (400 ml) Vegetable stock
  • Salt
  • 100 g Salmon ham
  • 1/2 (75 g) Cup Crème fraîche
  • pepper
  • 1 small stem of borage

Peel and wash the potatoes and roughly chop them up to 2 pieces. Wash the cucumber and roughly cut up to a small piece. Peel onion and chop finely. Heat oil in a pot.

Braise the potatoes, onion and cucumber cubes in it. Deglaze with vegetable stock and 1/4 liter of water and boil for 20 minutes. Finely dice the remaining potatoes and cook in a little salted water for 10 minutes.

Finely dice the remaining cucumber. Cut the ham into fine strips. Drain the broth. Put the potatoes in a blender, puree them finely and put them in a bowl. Pour in the broth again and stir well.

Stir in the crème fraîche. Season to taste with salt and pepper. Add the potato and cucumber cubes to the soup. Wash the borage, chop it finely and add to the soup. Chill the soup. Serve the soup with strips of salmon ham.
5.
Garnish with borage.
