Cold pea soup

For 4 people
  • 1 medium-sized onion
  • 1 EL Oil
  • 3/4 l Vegetable stock (instant)
  • 1 pack (300 g) Frozen peas
  • Salt
  • white pepper
  • 1 Bund Radishes
  • some stem (s) basil
  • 4 EL sour cream

Peel the onion and dice it finely. Heat the oil in a saucepan and fry the onions until translucent. Deglaze with the stock and add the peas. Let simmer for 5 minutes. Puree with the cutting stick of the hand mixer and season with salt and pepper.

Let cool down. Clean and wash the radishes and cut into fine strips. Cut the basil leaves off the stems and cut into strips. Arrange the soup in plates. Pour a tablespoon each of sour cream, radish sticks and basil strips over the top.
