Cold melon peel

For 6 people
  • 1 organic lemon
  • 1 orange-fleshy melon (e. B. Cantaloupe; approx. 800 g)
  • 1 Vanilla pod
  • 500 ml sweet white wine
  • 3 cloves
  • 1 star anise
  • 1 cinnamon stick
  • 2 stem (s) Lemon balm

Wash the lemon, half Peel the skin thinly. Cut the peel into long thin strips. Put lemon strips in a small saucepan and cover with water. Bring to the boil, simmer for approx. 2 minutes and drain again

Halve, core and peel the melon. First cut the pulp into thin wedges, then into pieces. Cut in the vanilla pod lengthways, scrape out the pulp. Bring the wine, lemon peel, spices, vanilla pod and pulp to the boil

Add melon pieces and simmer over low heat for 8-10 minutes. Take the pot off the heat, let it cool and chill for at least 1 hour.

Wash lemon balm, shake dry and pluck the leaves off. Distribute the cold bowl on deep plates, decorate with lemon balm and serve cold
