Cold dog

For 12 pieces
  • 200 g whole milk couverture
  • 250 g Dark chocolate couverture
  • 250 g coconut fat
  • 2 eggs (size M)
  • 60 g Icing sugar
  • 2 EL cocoa powder + something to dust
  • 150 g Shortbread biscuits

Chop both couvertures. Melt the coconut oil and couverture in a large bowl over a warm water bath. Mix eggs, powdered sugar and e tbsp cocoa with the whisk of the hand mixer until thick and creamy. Stir the egg mixture into the chocolate mixture, mix in well

Line a loaf tin (23 cm long, 1.5 liters) with foil. Spread the bottom with a little chocolate cream. Place 4 biscuits side by side on top. Repeat the process until all the cookies and chocolate cream are used up. Finish with the cookies. Chill overnight. Overturn the cake on a plate, peel off the foil, dust with cocoa
